Six stages, one spongy sweet

01 / BOIL

Boil the milk

Full-cream cow's milk goes into a wide brass kadhai and is brought to a steady, rolling boil — the foundation of good chenna.

02 / CURDLE

Split with lemon

A splash of lemon juice or vinegar is stirred in off the heat, splitting the milk into soft curds and clear whey.

03 / KNEAD

Strain and knead the chenna

The curds are strained in muslin, cooled, and kneaded by hand for several minutes until smooth and completely free of grain.

04 / SHAPE

Roll into balls

The kneaded chenna is divided and rolled between the palms into smooth, crack-free balls — the size decides the final rasgulla.

05 / SYRUP

Light sugar syrup, rolling boil

A thin sugar syrup is brought to a hard, rolling boil in a wide pan — hot and vigorous enough to make the balls double in size.

06 / PUFF

Boil until they puff and float

The chenna balls go into the boiling syrup covered, puffing up light and spongy in about fifteen minutes — ready to serve chilled or warm.

Chini + Chenna

Two ingredients. One craft.

Chini means sugar. Chenna means fresh curd cheese. Between the two sits everything Bengal knows about making milk into something worth queueing for. We still curdle every batch by hand, still knead until the chenna forgets it was ever milk, and still count the boil in minutes, not timers.

No shortcuts, no pre-made chenna delivered in tubs — just the same three-step morning our first karigar taught us.
